Muffins, these are my faves :p
Poppyseed muffins (preferred without the poppyseeds)
These muffins are delicious and very easy to make. You can use this recipe as a base and then add other ingredients that you like. Mine are raspberries with white chocolate. Or with apple and cinnamon or baked with M&M’s.

1 lemon |
300 grams self raising flour | 300 g zelfrijzend bakmeel, gezeefd
1 tablespoon baking powder | 1 theelepel bakpoeder
150 grams light brown casted sugar | 150 g lichtbruine basterdsuiker
3 tablespoons poppy seeds | 3 eetlepels maanzaad (zakje a 125 g)
2 eggs | 2 eieren
200 ml buttermilk | 200 ml karnemelk
100 ml sunflower oil | 100 ml zonnebloemolie
Pre-heat your oven at 200 °C. Clean the lemon and grate half of the skin (aprox. 1 tablespoon) and juice half of the lemon. Whisk together the flour, baking powder, custed sugar, lemon zest, poppy seeds, and a pinch of salt and set aside. In an other bowl lighty wisk the eggs. Add the lemonjuice, buttermilk en sunfloweroil and mix. Stir lightly into dry ingredients just until moistened, a few lumps are okay. Fill greased or paper-lined muffin cups about three-fourths full. Bake in the middle of the oven in 20-25 min. till the are goldenbrown or until a toothpick comes out clean. Let them cool down for 5 min. then take them out of the bakingtray too let them cool down completely.
